Breakfast Sushi with bacon and omelet
In Thailand, we believe that breakfast is the most important meal in a day. There is an old saying: “have breakfast like a king, lunch like a lord and dinner like a peasant” which means have a giant breakfast, a decent size lunch and a small dinner. To me, the statement makes total sense since breakfast jump-starts your metabolism so more calories are burned and fuels you for the whole day. Lunch keeps you going. And just enough dinner eases your digestion, helps prevent a bad night’s sleep and weight gain due to excess calories that you do not need.
Today, I had leftover sushi rice and decided to make sushi for breakfast. However, I do not think my stomach is ready for raw fish just yet so I put in things known for breakfast, bacon and omelet, for the filling instead.
A balanced meal is always important, so I added avocado too.
Ingredients
1 cup left over sushi rice
1 cooked bacon
1 egg omelet/tamago
1 piece avocado
Half of a seaweed/nori sheet (it is an inside out roll)
